Harvesting

Artisans carefully assess each cinnamon tree, guided by years of expertise to ensure only mature bark is selected—preserving younger trees for future harvests. With a precise cut at the stem’s base, the chosen trunk is gently freed and carried to the Peeling Atelier, where tradition meets skill.

This delicate operation is entrusted to seasoned harvesters whose field wisdom brings both respect and precision to every step.

Scraping

With practiced grace, artisans wield the traditional Koketta blade to gently scrape away the outer bark of the harvested cinnamon stem. This careful removal unveils virgin Ceylon Cinnamon—untouched, golden, and imbued with its signature warmth.

As the bark yields, the air begins to whisper notes of honeyed spice—soft, sweet, and unmistakably pure.

Rubbing

With the outer bark removed, the inner layer—rich in aroma and delicacy—is carefully pressed to loosen it from the rigid central stem. Artisans then guide a weighted brass rod along its length, coaxing the bark to release in graceful curls and readying it for the art of precision peeling.

This meticulous process is carried out by master harvesters whose deep field wisdom ensures purity in every strand.

Peeling

Once loosened, each bark segment is methodically examined for texture, integrity, and aromatic potential. To begin the delicate peeling ritual, artisans make two precise incisions at either end, setting the stage for expert extraction. With a curved blade and years of practiced skill, they gently draw out the inner bark—revealing virgin Ceylon Cinnamon in its purest, most fragrant form.

Throughout the process, quality is judged by subtle signs in texture, fragrance, and the absence of imperfections—ensuring only the finest strands continue on their journey.

Quilling making

Delicately coiled and layered by skilled hands, the inner Virgin Ceylon Cinnamon bark transforms into slender, cigar-like Quills—each one bearing nature’s own fingerprint and the artisan’s subtle mastery. These fragrant spirals embody centuries of tradition and the quiet precision of handwork.

Quills range from 5 to 10 cm in length and are classified into four distinct grades: Hamburg, Mexican, Continental, and the highly prized Alba—celebrated for its elegance and rarity.
