At the boundary of the Sinharaja rainforest, cinnamon has been cultivated for generations. Knuckles Valley Plantation, in partnership with an Australian Vocational Training Academy, offers structured certificate programmes that pass this knowledge on — combining classroom instruction with hands-on training in a working plantation.
Our courses are built for people who want more than theory. Every programme pairs three months of academy learning with three months of In-Plant Training (IPT), so you graduate having done the work, not just read about it. Whether you're a farmer looking to grow better trees, a young professional entering the spice trade, or someone building a value-added cinnamon business, there's a pathway here for you.
We teach cinnamon the way we practise conservation: sustainably, scientifically, and with respect for the land and the communities who depend on it.

Before You Choose: Which Path Fits You?

Cinnamon is two industries in one — cultivation and commerce — and our training reflects that. Before enrolling, it helps to know where you want to focus:

  • The farmer / cultivator perspective — growing, harvesting, and processing high-quality cinnamon from the field.
  • The export, trading, and commercial processing side — quality standards, value addition, and the business of getting Ceylon cinnamon to the world.

How Our Training Works: Academy + In-Plant Training

Each certificate is delivered in two stages:

Academy (3 months) — structured instruction covering the science, standards, and techniques behind each stage of cinnamon production.

In-Plant Training / IPT (3 months) — a short-term programme where you join our working plantation to gain practical, real-world exposure. IPT bridges the gap between classroom theory and the actual workplace, teaching professional etiquette, industry workflows, and practical skills — all through guided observation and supervised practice, without the pressure of full operational responsibility.

IPT vs. Internship — what's the difference?
IPT is a 3-month programme focused on observation and building awareness of industry standards. An internship runs longer (typically 6 months) and involves active participation and completing actual project work. Our certificates use the IPT model so learners can experience the full production cycle across multiple stages.

1. Cinnamon Nursery Management, Seed Storage & Field Management

Everything begins with a healthy plant. This foundation course teaches you how to establish and manage a productive cinnamon nursery and field from the ground up. You'll learn to select high-yielding varieties, achieve reliable seed germination, and use vegetative propagation to raise strong seedlings. In the field, you'll master proper plot layout for long-term productivity and the training techniques that encourage young plants to grow straight, harvestable stems. Ideal for farmers and cultivators building or improving a cinnamon plantation

3 Months Academy + 3 Months In-Plant Training

2. Harvest Technology

Ceylon Cinnamon Leaf Oil is a natural essential oil derived from the leaves of the Ceylon cinnamon tree. With a slightly earthy and spicy fragrance, it is commonly used in aromatherapy, perfumes, and natural cleaning solutions. The oil is valued for its soothing properties and is often used to promote relaxation and wellness.

3 Months Academy + 3 Months In-Plant Training

3. Post-Harvest Processing

Quality is won or lost after the bark leaves the tree. This programme covers the critical post-harvest stages that determine market value: standardised drying methods that preserve aroma and colour, consistent grading techniques aligned with industry classifications, and quality-management practices that ensure every batch meets export-grade standards. Essential for anyone moving into commercial processing or trading.

3 Months Academy + 3 Months In-Plant Training

4. Value Addition & Oil Extraction

Turn raw cinnamon into higher-value products. This advanced course explores the commercial and technical side of the spice business — creating value-added cinnamon products and applying laboratory-level quality evaluation. You'll also learn the technical steps of steam distillation to extract cinnamon leaf and bark oils, opening opportunities in the growing market for natural essential oils and specialty ingredients. Best suited to learners focused on processing, product development, and export.
